What are peperoni cruschi?
Peperoni cruschi are made from Peperone di Senise IGP, a sweet pepper sun-dried in the Senise area of Basilicata, southern Italy. Fried briefly in olive oil they become crisp like chips, smoky and slightly sweet. They have nothing to do with chili peppers: no heat, just intense flavor and the crunch that gives them their name (crusco means crunchy in Lucanian dialect).
Where does the Moliterno cheese come from?
Canestrato di Moliterno IGP is a hard sheep and goat cheese (70 to 90 percent sheep, the rest goat) from Moliterno, a village in the Potenza province of Basilicata. The milk comes from local ewes and goats raised on free pasture, and the cheese ages for at least 6 months in the fondaci, the traditional cellars unique to the village. On the pizza it melts into the tomato, leaving the salty edge behind.
What is the difference between the gluten free Basilicata and the regular?
The toppings are identical: peperoni cruschi, Moliterno pecorino, fresh mozzarella, almonds, raisin vinegar. The dough switches from Caputo Super Nuvola wheat flour to Caputo Fioreglut, the dedicated gluten free flour. The texture is slightly more compact but holds the same chew. Both versions ship from the same Manhattan kitchen.
