Roberto Caporuscio grew up on a dairy farm in Pontinia making and selling cheese before he became a Neapolitan pizza maker, and he still teaches cheese making at the pizza school in our Manhattan restaurant. That dairy craft is the root of everything in this category, which today opens with our Burrata and grows from there. Nothing here is mass-produced; it carries the same hand-work as the dough.
