Ingredients: Homemade mozzarella filled with homemade stracciatella (made with mozzarella and cream), salt. 

When your Burrata arrives, place it immediately in the freezer.
To serve: Remove from freezer and thaw in the refrigerator one day prior to serving. 
For best taste and texture, remove the plastic and immerse the Burrata in warm water for 5 minutes before serving. Plate and savor at room temperature.

What is the difference between Burrata and mozzarella?
Mozzarella is a single fresh cheese with the same texture all the way through. Burrata is a filled cheese: an outer mozzarella shell closed around a center of stracciatella, which is shredded mozzarella mixed with cream. The shell is firm and elastic, the center is soft and creamy. Burrata is cut open at the table so the filling spills onto the plate.
How should I serve the Burrata?
Serve it at room temperature, not straight from the refrigerator. Common pairings are ripe tomatoes with extra virgin olive oil, salt and pepper, or grilled bread as a starter. It also works with peaches, prosciutto crudo, or arugula. Do not heat the Burrata, since the cream inside separates and the texture is lost. Cut it open at the table and serve right away.
How long does the Burrata last after thawing?
Eat it within 24 to 48 hours of thawing. Move it from the freezer to the refrigerator one day before serving, then remove the plastic and immerse it in warm water for about 5 minutes right before it goes on the plate. Once cut, finish it within a few hours, since the stracciatella center dries out and loses texture. Do not refreeze it once thawed.
