What is the difference between cannelloni and manicotti?

Cannelloni are tubes of fresh egg pasta rolled around a stuffing and baked in sauce. Manicotti are similar but typically use crepe-like wrappers instead of pasta, and the term is more common in Italian-American kitchens than in Italy. Ours are the original Italian cannelloni: rolled fresh egg pasta tubes, not crepes.

How do I cook the frozen Cannelloni at home?

There are two options on the box. Easier: move the tray to the refrigerator the day before serving, then microwave for 4.5 minutes when ready to eat. Faster: pull the tray from the freezer 3 hours before, let it sit at room temperature, then microwave for 3 minutes. An oven option also works, at 350°F for 25 minutes covered with foil.

Where does the stuffing in the Cannelloni come from?

The stuffing is prepared in our Manhattan kitchen with ground beef, Italian-style bacon (similar to pancetta), fresh homemade mozzarella, and the classic soffritto of carrots, celery and onions slow-cooked in olive oil. Salt is the only seasoning beyond what the meat and vegetables release.

Love this stuff! ordered nine of them! the only problem was the delivery, all the plastic containers were cracked and/or crushed. Was able to salvage them all but am still weary of plastic bits. perhaps stamping them fragile/perishable would help.
