Is this the same Margherita served at the Manhattan pizzeria?
Yes. The gluten free Margherita uses the same tomatoes, home-made fresh mozzarella, fresh basil and extra virgin olive oil from our Manhattan kitchen, with one change on the dough: Caputo Fioreglut replaces Caputo Super Nuvola. It is pre-baked at the pizzeria by Roberto Caporuscio, then cooled and frozen the same morning before shipping.
How does the gluten free Margherita differ from the regular Margherita?
The toppings are identical: tomatoes, home-made fresh mozzarella, fresh basil and extra virgin olive oil. The dough switches from Caputo Super Nuvola wheat flour to Caputo Fioreglut, the dedicated gluten free flour from Mulino Caputo in Naples. The texture is slightly more compact, with a chew similar to the wheat dough.
How do I cook the gluten free Margherita at home?
Remove the pizza from the freezer and let it sit at room temperature for 30 minutes. Preheat your oven to 500°F and place the pizza on a baking sheet or pizza stone. Bake 2:30 to 3:15 minutes in a home oven, or 2:15 to 3 minutes in a commercial oven. The Fioreglut dough crisps slightly faster than wheat, so check the crust at 2:30 and pull it as soon as it turns golden.

Unfortunately Glutened

I was very excited to try this pizza because it's so hard to find good gluten free pizza. The reviews were all really great too! It tasted good but unfortunately, it did appear to gluten me. I can't be sure, but I have very specific symptoms when glutened and they appeared after eating this pizza. I won't be eating here again.

More topping please!

The pizza crust was good, but the pizza itself needed a lot more of the sauce and cheese. I ended up adding my own.

Disappointing

I was sooo excited to try this pizza. I read great reviews and although it was expensive I was hoping it would be well worth it. After I cooked it, it looked amazing. However, it was quite tasteless. I added oregano, but that didn't help at all. I was really expecting this to be my new go-to GF pizza place: but sadly, it was worse than many frozen GF pizzas I've had.
I also bought the Diavlo pizza, so maybe that one will be tastier.

Not as good as the picture

The crust on this pizza was delicious, but there was basically no sauce or basil on it. In the picture you see good red sauce, mine had almost none.
I would not order this again.

No flavor whatsoever

The crust was chewy enough, but there was absolutely no flavor to this. I ended up adding some pizza sauce and mozzarella so I could eat it.
