When your Pastiera arrives, place it immediately in the freezer. To serve: Take out of the freezer and place in the refrigerator the day before. Let it thaw slowly overnight. Bring to room temperature 30 minutes before serving. Dust with powdered sugar before bringing to the table.

Great little treat

Not the memory

My wife and I spent about thirty years in the Somerset, NJ area and were gifted a wheat pie from an Italian bakery in Bound Brook. We had a flashback of that experience and wanted that pie for our Easter celebration. Finding no supply in our current area of Richmond Virginia, we opted for Keste's pastiera napolitana.

The pie's arrived in great shape, cold and protected by an incredibly good packing.

Our taste test sharpened our memory of the New Jersey pie. The Keste pie was very tasty but had fewer wheat berries. Also the custard was dry, possibly to make the Keste pie more shippable. The NJ pie was very creamy, soft and custardy and did not have to suffer at the hands of a long distance shipment. The NJ pie remains our desire and we will keep on that trail.
