Frequently Asked Questions

What is the Polacca Aversana made of?
The Polacca Aversana is a traditional pastry from Aversa, in the Campania region near Naples. It is made from two thin layers of brioche dough that enclose a filling of custard and amarena cherries in syrup, with a sugar-crusted top. The brioche shell stays soft, while the center is sweet from the custard and tart from the cherries.
What are the amarena cherries in the Polacca Aversana?
Amarena are Italian sour cherries, smaller and darker than sweet dessert cherries and noticeably more tart. For the Polacca they are preserved whole in a heavy sugar syrup. The syrup-soaked cherries add a deep red color and a sweet-and-sour contrast against the custard.
How big is one Polacca Aversana?
One Polacca weighs about 1 pound (450 grams) and serves four to six people once portioned. It arrives whole on a single platter rather than pre-sliced. Move it from the freezer to the refrigerator the day before serving, then slice into wedges with a serrated knife once fully thawed.

Amazing Taste

I ordered two pizzas, three lasagnas, and one Polacca Aversana. Everything was delicious and the crust on the pizza was mind blowing. I moved to Florida 36 years ago, and I had forgotten how good the crust in New York was. The lasagnas were very good, but arrived somewhat damaged. The containers they were in had cracked or broken in places. That did not affect the lasagna though so I was able to enjoy it. Nice size pieces and delicious Bechemel sauce in between the layers. it’s hard to find that down here. The most delicious item though was the. Polacca Aversana. It was like heaven, with delicious dough, custard, and crunchy topping. Will definitely order again, even though it was very pricey.
