How to prepare

When your meatballs arrive, place it immediately in the freezer.
When you’re ready to enjoy it, you have two options:

1) Place the meatballs directly from the freezer into the microwave and heat for 7.5 minutes until ready.
2) Transfer the meatballs from the freezer to the refrigerator and let them thaw overnight (about 12 hours), then heat them in the microwave for 1.5 minutes.

What is Moliterno cheese?
Moliterno (Canestrato di Moliterno) is an aged cheese from Basilicata, made from a blend of sheep and goat milk, named after the town of Moliterno in the province of Potenza. It is sharp and slightly tangy, firm enough to grate, aged from 60 days to over a year. The flavor sits close to Pecorino Romano but rounder and less salty. On the Polpette it goes into the meatball mixture for sharpness, balancing the milder beef. It carries IGP protected geographical status.
Are the meatballs gluten free?
Yes. The Polpette della Zia use gluten free bread as the binder instead of standard breadcrumbs, and all other ingredients (beef, eggs, cheeses, herbs, vegetables, tomato sauce, milk) are gluten free. The kitchen handles them separately to reduce the risk of cross-contamination. For diners with celiac disease, we recommend contacting our support team for the latest production procedure.
What should I serve with the meatballs?
Several options. Over pasta such as spaghetti or rigatoni for the classic Italian-American pairing, in a roll as a meatball sandwich, or skewered with toothpicks as an appetizer. They pair well with a Chianti or Montepulciano d'Abruzzo. The 440g tray of four serves two as a main, four as an appetizer.

Gluten free meatballs and lasagna

First off I must say my family and I have been eating at Keste for many years and the food is amazing. My 8 year old grandson is celiac and he needs a restaurant with no cross contamination. Keste is the place to go! The meatballs are phenomenal and my grandson loves them! So much that I ship them down to VA. He recently tried the GF lasagna and he loved it! My son said the pasta was cooked just right and the flavor was delicious. The lasagna will now be added to his monthly shipment. If you are near the FIDI area you need to go and eat at Keste. They also have a full bar and make fantastic martinis!
