To serve: Take out of the freezer and place in the regular cooler the day before, OR leave at room temperature for 3 hours before the meal. Serve the jar chilled, eat with a spoon directly from the glass.

Does the Kesté Tiramisù contain mascarpone?
No. The cream layer is built on heavy cream and frozen yolks whipped to a stable foam, with sugar. This is a Kesté kitchen variant of the recipe that leaves mascarpone out. The espresso and sponge cake layering stays the same.
Why is the Kesté Tiramisù made with sponge cake instead of savoiardi?
Sponge cake is softer than savoiardi and takes up espresso more evenly. Savoiardi can break apart when they soak too long, or stay dry if they are dipped too quickly. The sponge cake layer gives a more even coffee saturation from the top to the bottom of the jar.
How is the Kesté Tiramisù packaged?
Each portion is assembled directly into a single-serve glass jar, then sealed and frozen. The jar ships and stores frozen, and it moves from the freezer to the refrigerator to thaw before serving. Eat it straight from the jar with a long spoon, or scoop it onto a plate.
