Frequently Asked Questions

Why is the Cacio e Pepe pizza Neapolitan and not Roman in style?
Cacio e Pepe is a Roman pasta dish, traditionally just Pecorino and black pepper. It was not originally a pizza. Roberto Caporuscio translates that flavor profile, Pecorino Romano with freshly cracked black pepper and fresh mozzarella, onto a Neapolitan crust, the dough tradition he learned in Naples. The result takes a Roman pasta and reads it through the Neapolitan crust style.
What is the difference between the Cacio e Pepe pizza and the classic Margherita?
Three things. No tomato sauce, since the Cacio e Pepe is a white pizza. No basil, with pepper as the main seasoning. Pecorino Romano, a salty aged sheep cheese, in place of the standard topping, which gives a sharper, more pungent bite. Same Caputo Super Nuvola dough, same fresh mozzarella, different flavor profile.
Is the Cacio e Pepe pizza vegetarian or gluten free?
It is vegetarian: there is no meat in the recipe. It is not gluten free, since the Caputo Super Nuvola dough contains gluten. For a gluten free option, the gluten free line is made with naturally leavened Caputo Fioreglut flour.

Tasty but very small and overpriced.

We liked this pizza but it was extremely small for the price. It heated up very well and tasted fresh, but we felt it was double the price for what you get.

Great pizza

My wife and I purchased three pizzas and the first we enjoyed was the cacio e Pepe. It was amazing. The only criticism we could offer is the pizzas did not arrive completely frozen.
