Frequently Asked Questions

What is 'Nduja and where does it come from?
'Nduja is a spreadable pork salami from Calabria, in southern Italy, made from pork shoulder, belly, jowl and Calabrian chili peppers, ground fine and aged for months. It is soft enough to spread and hot enough to define the recipe. On the Calabria pizza it is blended into a cream with red pepper and honey, which spreads and warms under heat.
How spicy is the gluten free Calabria pizza?
Hot, but not extreme. The 'Nduja cream is balanced with honey, which tames the chili without removing the heat. The Spianata salami adds a second layer of spice, and the hot red pepper jelly goes on cold at the end. Most diners describe the heat as a slow building warmth rather than a punch, so it is best suited to those who enjoy spicy food.
What is Pecorino Crotonese?
Pecorino Crotonese is a sheep milk cheese from the province of Crotone, on the Ionian side of Calabria, aged for a minimum of 90 days. It carries PDO status, semi-hard, with a sharp tangy edge that holds up against the 'Nduja heat. On the Calabria pizza it melts in pools between the Spianata and the mozzarella.

Gluten Free

I've been ordering these gluten free Keste pizzas for some time now. They are excellent. My last order I mistakenly did not order the gluten-free (my error). I couldn't eat them. I was in a rush when ordering. Make certain to check your order before submitting. That said, you will love these pizzas.

Extremely thin

Ordered 4 gluten free pizzas. All 4 have been so thin of crust that they are almost inedible. By the time the pizza is actually warmed up its already too crunchy to eat. Very disappointed considering the price for such little crust.

Flavors without too much spice

It's so easy for Calabria flavors to be overly spicy but this one has the flavors shine through and then consumer can choose spicy level!
