How does the gluten free pizza del Re differ from the regular del Re?

The dough switches from Caputo Super Nuvola wheat to Caputo Fioreglut, the dedicated gluten free flour. The Parma ham goes on after the bake on both versions, so the texture stays soft and pink.
Where does the Prosciutto di Parma come from?
Prosciutto di Parma DOP comes from the hills south of Parma, in Emilia Romagna. The pork legs are dry-cured with sea salt and aged for at least 12 months in the area's controlled microclimate, which gives the ham its sweet flavor and tender texture. On the pizza del Re it is sliced thin and laid on after the oven, so the heat softens the fat without cooking the meat through.
What truffle is in the truffle cream?
The truffle cream uses Italian black summer truffle (Tuber aestivum), blended into a base with butter, mushrooms and seasoning. It carries the woody, earthy notes that pair with the Parma ham.
