Frequently Asked Questions

What is crespone salami?
Crespone is a large-format Italian dry-cured pork salami, milder and coarser than Milano salami. The grain is bigger and the pepper is gentler, with a cure that typically runs 2 to 4 months. On the Macellaio it brings the savory bite that anchors the four cured meats without overpowering the sausage or the Prosciutto di Parma.
What is the difference between the gluten free Macellaio and the gluten free Padrino?
The Macellaio is a meat-led red pie with four cured meats: sausage, Prosciutto di Parma, porchetta and crespone. The Padrino is a Sicilian-Lazio crossover with Caciocavallo Ragusano, Sopressata and Gaeta olives. Both are made on Caputo Fioreglut.
How do I cook the gluten free Macellaio at home?
Remove the pizza from the freezer and let it sit at room temperature for 30 minutes. Preheat your oven to 500°F and slide the pizza directly onto the rack or a baking sheet. Cook 2:30 to 3:15 minutes in a home oven, or 2:15 to 3 minutes in a commercial oven. The cured meats need only the time the crust takes to turn golden.

Good buy few toppings

The crust and cheese is REALLY good! My son keeps asking to have it again. Unfortunately, there were only a few toppings in a line right down the middle of the pizza, so only 2 pieces had anything besides cheese and there definitely wasn’t any prosciutto. Wouldn’t pay extra for non-existent toppings next time.
