Ingredients: Lightly fried pizza dough topped with imported Italian peeled tomatoes San Marzano area, imported smoked Buffalo Mozzarella and basil, finished in wood-fired oven.

All frozen products must be placed in the freezer as soon as delivered to you. Remove the pizza from the freezer and let it sit at room temperature for 30 minutes. Preheat oven to 500F, allow pizza cook for 2.30 - 3.15 min in house oven or 2.15 - 3 min in commercial oven.

What does the double cooking process mean for the Montanara?
The same dough goes through two cooking stages. First the raw dough is lightly fried in hot oil for under a minute, which puffs the structure. Then it is topped with sauce, smoked buffalo mozzarella and basil and finished in a wood-fired oven that browns the cheese and crisps the surface. The result is a crust that is slightly compact from the fry and airy at the rim from the bake.
How is the Montanara different from a regular Margherita?
Both use the same Caputo dough, but the cooking process differs. The Margherita is baked once. The Montanara is fried first, then baked, and it is topped with smoked buffalo mozzarella instead of standard fresh mozzarella, with basil added at the end. The Montanara is denser at the center and smokier, with a fried-bread character.
Is the Montanara pizza gluten free?
No. The standard Montanara uses Caputo Super Nuvola dough, which contains gluten. A Gluten Free Montanara made with Caputo Fioreglut is available as a separate option. For celiac diners we recommend contacting our support team for the latest production procedure.
