Why is the pizza named after Roberto Baggio?
Roberto Caporuscio designed the pizza as a tribute to Roberto Baggio, the Italian football player who won the 1993 Ballon d'Or. The Asiago cream replaces tomato sauce because Baggio is from Caldogno, in the Vicenza province of the Veneto region, where Asiago is the local PDO cheese.
What is Asiago cream?
Asiago cream is a sauce blended from aged Asiago DOP, milk and cream, smooth enough to spread on the dough like a base. It carries the sharp-nutty flavor of the aged cheese without the chewy texture. It pairs with the mushrooms and the salami in place of the traditional tomato sauce.
What is the difference between the gluten free Roberto Baggio and the regular Roberto Baggio?
